"Katana-Moulin" means "mill sword", a word and product creation of our five-year cooperation with the Japanese knife-craftsmanship. In Japan the shape of the blades are absolutely functional, like the tuna fish knife which gave the suggestion for our ham- and filetting knife. The tuna fish knife is very similar to the Japanese swords so called "Katana". The stainless, curved blade of the "Katana-Moulin" is handground in the way of the "Walkschliff" (a special grinding technique only used in our manufactury) and "blue-glazed" (it is also an old special technique to finely grinding blades). The bent curve of the cutting edge is suitable for cutting ham and salmon. The handle is made of Austrian plumwood, carefully formed and oiled by hand.
